The "off premise" caterer has a demanding and stressful occupation, but when the party is perfect (the guests are raving and the client is elated) it's all worth while.
We have to count out thousands of pieces of equipment load them into a van or truck, carefully transport them to the party venue and unload. After unloading we have to quickly and efficiently set up a temporary kitchen, finish preparing a meal, serve, clean, repack and reload to go back to our shop and unload to clean some more. Wow! It's a fifteen hour day.
